Ya'll ever just have a craving for a pot roast, but don't have the time, money, or energy to actually sit there and prep for it? Because same bitch! That's where this little diddy I threw together comes in.
Bonus Points: It's also Gluten Free!
Your girl also has no time for staged photos either. This here is a picture snapped on my iPhone 14 as I was actively cooking dinner ( as most of my pictures are taken). It's only the real deal over here, people. No fake shit!

I know no one ever reads those long ass posts about how so-and-so's husband loves when they make this recipe after a long day working his blue collar job bullshit, so I'm not. I'm here to make your life fucking easier and just give you what you want.
This recipe should take max 30 minutes to pull together, and will cost you a total of $30.91 for 5-6 servings. Six servings if you really wanna measure that shit out. If you make it into 5 servings, it comes out to $6.18/serving. Not too damn bad for a relatively healthy meal for a family of 5 or a weeks meal prep. It's also only 3 items, unless you're trying to get fancy with it. Items are as pictured below.

Your List of Ingredients
2 Hormel Square Table Beef Roast Packages ($12.84 each)
2 cans of Del Monte (cut in half) ($1.97 each)
1-2 bags of Birds Eye broccoli, carrot, and cauliflower steam in a bag ($2.19 each)
(optional) Red Pepper Flakes
(optional) Parmesan Cheese
Step 1: Read The Instructions
No, for real....read the fucking instructions on each product first! You'd be surprised how many people fail to do so lol
Step 2: Set Your Shit Up.
Line up all of your products on the counter so you're not running around your kitchen like a crazy person. Open the cans of potatoes and put them, water and all, in a sauce pot. You can cut them in half in there...carefully! They might be soft, but you're still handling a knife, even though a butter knife would probably suffice. Set those to a medium heat on your stovetop. No need to overdue those since they are already cooked, you're just trying to heat them up a bit before we throw everything together.
Cook the Hormel Beef Roast packages as the directions say on the back of the container for stovetop. (See step one for clarification). I used a large roaster style pan.
Microwave the Birds Eye Steam-in-a-Bag veggies as the instructions say on the back. Typically 5-6 minutes depending on your own microwave.
You are going to have all of these things going at the same time. All of these items take roughly the same amount of time to cook, so if you time it right, nothing will be sitting and waiting too long.
Step 3: Throw All Them Shits In Together
Once everything is done, drain your frozen veggie bag (no one likes gross frozen veggie water) and toss the veg into the roaster pan with the Beef Roast.
Using a straining spoon, you're going to scoop the potatoes from their pot and then place them into the roaster pan.
Give it a good mix to coat everything in that au jus sauce the Hormel Beef Roast comes with, and just like that, dinner is served!
Wham Bam Thank You Ma'am
And there you have it! A one pot (ok technically two pot) gluten free 30 minute pot roast for Broke Bitches. Now, I'm sure you're wondering if this could be any good, and I am here to tell you that it's better than it has any right to be, considering that we're using all pre made shit. It's not going to beat that crock pot recipe that you have saved from 3 months ago, but we both know that's not why you're here.
No nutritional information is listed because I am not a registered dietician, and I am also not judging you on how much you should be eating.
Disclaimer: Prices were taken from a Publix in Florida which is the most expensive grocery store around, so if you shop at a different store, you might actually find a better deal *
